Vault x Dorian - Amaro for locals
A beautiful floral amaro made in collaboration with the team at Dorian in Notting Hill. A bistro for locals.
We started developing this liquid gold in Spring, and over the course of the summer it has evolved into this beautiful, bold, bitter amaro.
The base recipe is a blend of multiple infusions and hand foraged botanicals including marigold flowers and petals, sweet clover, pine, heather, oregano, meadowsweet, pink pepper, dandelion, burdock, rhubarb, gentian, apricot & orange; amongst many other bitter roots, barks and herbs.
These multiple macerations have been blended with a little of our juicy English Bacchus wine to add freshness and acidity whilst retaining its robust body; before resting in tank for a few weeks to fully integrate.
As a final stage, we finished the amaro with a fresh infusion of oregano, marjoram and orange peel and gently sweetened it with a split of English wildflower honey from Northumberland and sugar.
The result is a deceptively bold, bright and complex amaro, with a rich rounded mouth feel and long nuanced finish.
A joy to drink simply over ice with orange or lemon, it mixes incredibly well with tonic, soda and in our new favourite drink just in time for Negroni Week - the white negroni.
